Juicy, smoky Smoked Chuck Roast cooked low and slow until pull-apart tender—an affordable “poor man’s brisket” loaded with beefy flavor. Simple dry rub, steady smoke, and a good rest deliver shreddable meat perfect for sandwiches, tacos, and meal prep.

There’s nothing like smoking up a delicious chuck roast low and slow. It doesn’t need as much time as a pricey brisket and turns out just as tasty. Whether we are cooking up a roast to feed a crowd or including it with our weekly meal prep, smoked chuck roast is always easy and turns out delicious every time. We love to eat it on sandwiches and tacos, and sometimes, just grab a piece out of the fridge for a sneaky little snack. Honestly, this is the only smoked chuck roast recipe you need!

We’ve always got beef rub on hand, but on the odd occasion we haven’t restocked, it’s so easy to mix up with pantry staples so we can have a delicious roast any time. Whether this is your first time using your smoker at home or your 100th, this is a great recipe for everyone to enjoy.

Ingredients For Smoked Chuck Roast

  • Chuck roast – A 3 pound roast will feed about 6 people. Similar cuts to a chuck roast that you can use are blade roast or rump roast. A brisket has a similar flavor, but will have a higher price tag.
  • Yellow mustard – Classic prepared mustard is used to make sure the seasonings stick to the roast and adds some tangy flavor.
  • Beef rub – You can make a Homemade Beef Rub with a mix of pantry staples like kosher salt, ground black pepper, brown sugar, garlic powder, onion powder, white sugar, and smoked paprika. Use your favorite storebought rub or check out our very own Beef Rub to keep on hand.
  • Beef broth – This will help to keep the chuck roast nice and moist throughout the smoking process and enhance the delicious flavor. Beef stock will work great as well.

How To Make A Smoked Chuck Roast

  1. Cover entire roast in yellow mustard and sprinkle on the rub, covering whole roast well.
  2. Allow to rest for at least 1 hour before smoking.
  3. Place the chuck roast onto the smoker and smoke with lid closed until the internal temperature reaches 160 degrees Fahrenheit, approximately 3 hours.
  4. In a disposable foil pan, add the beef broth. Remove the roast from the smoker and place in the pan. Cover with aluminum foil and place pan in the smoker.
  5. Cook until the internal temperature hits about 205 degrees Fahrenheit, about 2 more hours.
  6. Remove the chuck roast from the smoker and allow it to rest for 60-90 minutes.
  7. Using serving forks, break up the smoked chuck roast into the desired size of meat pieces and serve with your favorite sides.

Pro Tips

  • When choosing wood chips to smoke chuck roast, we usually opt for strong flavors like mesquite, oak and hickory. Mild flavors like cherry or apple are good choices, too.
  • If your roast is not 3 pounds, smoke it for about an hour and a half per pound but keep an eye on the internal temperature as you go.

  • Disposable aluminum pan
  • Measuring spoons

Ingredients

  • 3 pound chuck roast
  • 2 Tablespoons prepared yellow mustard
  • 3 Tablespoons beef rub
  • 2 cups beef broth

Instructions

  • Cover entire roast in prepared mustard. Sprinkle rub on the roast cover entire roast well in seasoning.
  • Allow to rest for at least 1 hour before smoking.
  • Preheat the smoker to 250 degrees Fahrenheit.
  • Place the chuck roast onto the smoker and close the lid.
  • Smoke chuck roast until the internal temperature reaches 160 degrees Fahrenheit, approximately 3 hours.
  • In a disposable foil pan, add the beef broth. Remove the roast from the smoker and put in the pan. Cover with aluminum foil and place back on the smoker.
  • Continue to cook until the internal temperature hits about 205 degrees Fahrenheit, about 2 hours.
  • Remove the chuck roast from the smoker and allow it to rest for 60-90 minutes.
  • Using some serving forks, break up the smoked chuck roast into the desired size of meat pieces and serve with your favorite sides.

Storage And Reheating

Smoked chuck roast can be sliced or shredded and eaten as a main protein or added to wraps, tacos, nachos, salads – you name it!
