Grilled Spaghetti Squash

Looking for an easy side dish that’s healthy during grilling season? This Grilled Spaghetti Squash only requires a few ingredients and is so delicious. A low carb favorite that can be made without heating up the kitchen. The char on it gives it so much flavor!
I’m always looking for more easy, healthy side dishes cooked on our grill that I can throw on with our favorite burgers, pork chops and more.
Grilling spaghetti squash is going to be a regular supper event in our home all summer long.

Ingredients for Grilled Spaghetti Squash
- Spaghetti Squash – It’s the main ingredient here!
- Seasoning – Just salt and pepper
- Olive Oil – Or a light tasting oil like vegetable oil.
How to Make Grilled Spaghetti Squash
- Preheat grill to 400 degrees Fahrenheit using indirect heat.
- Cut spaghetti squash in half, lengthwise with a sharp knife. Scrape the seeds out with a spoon and discard.
- Brush olive oil over the flesh in both halves. Sprinkle salt and pepper over the flesh.
- Place spaghetti squash over indirect heat on preheated grill. Close the lid and cook for 25-30 minutes or until fork tender. The flesh will shred easily when the squash is cooked through.
- When it is done cooking, place squash flesh side down on direct heat and grill 3-5 minutes or until just charred.
- Remove from grill. Shred with fork. Serve.

What does indirect heat mean?
Cooking on indirect heat means that you will place the food on the side of the grill that is not turned on. Alternatively, direct heat would be placing the food on the heated side.
How to cut Spaghetti Squash in half
Spaghetti squash can be a little tricky to cut, but if you have patience, a flat surface and a sharp knife, you’ll be ready to grill it in no time at all.
Place the squash on a flat surface and cut into it, lengthwise. It may take several times pulling it out and putting it back in to really separate the halves.
If your spaghetti squash really is too hard to cut, you can quickly soften it by heating it in the microwave for about five minutes or roast it in the oven for 10 minutes at 400 degrees Fahrenheit after you’ve pricked it all over with a fork.
How to serve grilled spaghetti squash
- Sprinkle garlic powder or minced garlic along with the salt and pepper when you are preparing it.
- Top with Parmesan cheese. Cheese makes everything better!
- Add fresh herbs like parsley or basil.
- Warm up marinara sauce and serve it on top of your shredded spaghetti squash. Then add mozzarella or Parmesan cheese to the top.
- If you’d prefer Alfredo sauce, use that instead of the marinara sauce. Throw grilled chicken on with it!
How to store leftover grilled Spaghetti squash
Once cooled, store cooked grilled spaghetti squash in an airtight container in the fridge up to three days.
If you cooked more than one squash and want to freeze it for an easy supper later on, use a fork to scrape the spaghetti squash strands and then leave it in a colander (over a bowl) overnight to drain as much moisture as you can. Pack tightly in zip top freezer bags.
How to reheat Grilled Spaghetti squash
Reheat spaghetti squash in the oven or a frying pan if there is a large amount. Otherwise, pop it in the microwave for a couple of minutes, until is is hot throughout.

- Toss squash with some grilled cauliflower or serve it on the side.

Good recipe, but it takes way longer than suggested.
Mine was only a little larger than yours, and took an hour and a half.

How do you cook it on indirect heat?

Only turn the burners on one side of the grill on, place the spaghetti squash on the opposite side of the grill.

I simply put a piece of foil on top of the grill and set them on the foil so that they don’t burn or catch fire… Just above the actual flame instead of indirect. It works great and cooks faster than indirect heat. Thank you.

I love grilling everything I can. Almost had to use the grill in freezing temps last weekend when the power went out here in Texas!
2 questions…
Are we cooking indirect at 350 or 400? Both are listed.
When cooking indirect does it matter what side is on the grill? I am going to assume the uncut side since you put the cut side down later for grill marks.
Love your recipes. Sometimes have to adappt them to eliminate sugar and salt.
