Smash tacos are what happens when a smash burger and taco night get into a friendly fight and everybody wins. I press seasoned beef thin right onto a tortilla so it cooks up crispy and craggy, then pile on melty cheese and my copycat burger sauce for what is basically a Big Mac you get to eat like a taco.

Why My Big Mac Smash Burger Tacos Are Superior

The first time I made smash tacos it was after seeing them go viral on social media. Totally worth it. I smashed a burger straight onto a tortilla, cooked on the Blackstone and the result is a taco with crispy, beefy, lacy at the edges, piled high with my favorite toppings.

These are the perfect quick and easy dinner recipe on the Blackstone. The burger sauce is the part everyone fights over, and yes, I have made a second batch of just the sauce because the first one vanished before the tacos were even done. Between you and me, that is the real reason these keep landing on our table. I’ve started offering it as a condiment anytime we have burgers and fries!

What Is A Smash Burger?

It is important to note, smash burgers are life changing! These crisp burgers are a super popular style of hamburger. You take a ball of ground beef and smash it super thin on your griddle so that the end result is a deliciously crispy burger patty. These ‘tacos’ really take Taco Tuesday to another level.

Key Ingredients

  • Soft tortillas – Flour tortillas are typically the best option for Big Mac tacos, but you can use corn tortillas if you prefer.
  • American cheese – Big Macs always use American cheese, so this will mimic the flavor the best. Feel free to swap it out for other cheese though! Cheddar cheese, mozzarella and provolone would taste delicious.
  • Ground beef – Use 80/20 ground beef for those crispy, craggy smashed edges of the smash burger. Ground chicken and turkey will be good swaps, just add a little more fat to the griddle.
  • Beef seasoning – I love keeping a batch of Homemade Beef Seasoning on hand but definitely use store bought when I need to. In a pinch, simple salt and pepper is great on these patties.
  • Burger sauce – Pantry staples come together to make the most delicious sauce.

Toppings

Sliced tomatoes, onions, shredded iceberg lettuce, and dill pickles are the most common burger toppings. However, add any toppings you want! Set out a toppings bar so everyone can top their smash tacos exactly how they like them.

Use another section of the Blackstone griddle to make grilled onions to top your burger tacos with. Shredded cheese and bacon are also quite tasty. Add a little kick with some spicy mayo (simply mayo mixed with hot sauce) or sliced jalapeños.

How To Cook Smash Burger Tacos On Blackstone

Burger sauce. Mix together all of the ingredients in a small bowl or jar and refrigerate while preparing tacos.

Prepare taco toppings. Wash, chop and cover desired toppings in plastic wrap and store in the fridge until time to serve.

Portion meat. Divide the lean ground beef into 4 equal parts. Spread one section evenly over a tortilla, making sure the whole surface is covered and season with beef seasoning. Repeat with every other tortilla and then place them on a tray until ready to cook.

Start cooking. Place smash burger tacos, meat side down, on the prepared cooking surface for 3-4 minutes, then flip each taco and top the browned meat with a slice of cheese. Cook for an additional 3 minutes until the hamburger meat is cooked to an internal temperature of 160 degrees Fahrenheit.

Top and enjoy. Remove them from the griddle and add burger sauce and desired toppings.

The Big Mac Burger Sauce

This copycat sauce is a major game changer when it comes to grilling season and more! And the best part is? It is measured and mixed in the same container it’s stored in, so there isn’t a ton of clean up. Just be sure to mix it up first so it has time to sit and let the flavors really come together.

In a small mixing bowl or jar, mix mayo, yellow mustard, ketchup, minced onion, garlic powder and white vinegar. I’ve even been known to add a taste of pickle juice! Keep sealed in the fridge for up to a week and see what else can be topped with this deliciously sweet and tangy sauce.

Serving Suggestions

This Blackstone taco recipe goes well with just about anything. I love to make a fresh batch of Smoked Salsa, and Grilled Corn Salad is a great accompaniment, too. French fries are the perfect easy side dish to serve here!

My Smoked Potato Skins or Seasoned Smoked Potatoes always go over well alongside Big Mac tacos.

Serve up veggies like Grilled Asparagus or Grilled Corn on the Cob for a healthy side dish option. And don’t forget about simple Baked Potatoes on the Grill.

Storage And Reheating

Fridge: Leftover tacos will store best without any toppings or sauce. Place into an airtight container and store for 2-3 days.

Freezer: As long as there aren’t any toppings on top, the burger and tortilla combo can be frozen. Divide each smash taco with parchment paper and store in a freezer bag or airtight container.

Leftover burger sauce can be stored in separate jar or airtight container in the fridge for up to a week.

To reheat, place in the oven or air fryer. I do not recommend microwaving leftovers because the tortilla will get really soggy.

Pro Tips

  • Make your own homemade flour tortillas for an even better taste and fresher flavor.
  • For the real diner smash burger experience, roll each portion of beef into a ball, place it on the griddle, cover with the tortilla and use a spatula to smash it down!

Frequently Asked Questions

Can I make smash tacos in a skillet instead of a griddle?

Yes, you definitely can! Prepare the tortilla and beef per the recipe and preheat the skillet to medium-high heat. Cook in batches, depending on the size of the skillet.

Can I make gluten free smash tacos?

Yes! The only change you will need to make to this recipe is to use your favorite corn tortillas instead of flour. They might not stay together as well as a flour tortilla, but they will definitely do the trick!

Why didn’t the tortilla stick to the beef?

When pressing the beef into the tortilla, be sure to press nice and hard, beef side down, onto a hot surface. Be patient and wait to move it because moving it too soon can cause separation.

Equipment

Ingredients

Sauce

  • ½ cup mayonnaise
  • 1 ½ teaspoons yellow mustard
  • ¼ cup ketchup
  • ½ teaspoon dried minced onion
  • ¼ teaspoon garlic powder
  • ¼ teaspoon white vinegar

Smash Tacos

  • 2 Tablespoons butter
  • 1 pound ground beef 80/20 blend
  • 4 slices American cheese
  • 4 taco size soft tortillas get the SMALL ones!
  • 1 teaspoon beef seasoning or your favorite seasoning or salt and pepper
  • Toppings: Shredded lettuce, tomatoes, onions and pickles as desired

Instructions

  • In a small mixing bowl, mix mayonnaise, yellow mustard, ketchup, dried onion, garlic powder and white vinegar until well combined. Place in the refrigerator while you prepare the smash burger tacos.
  • Prepare toppings as desired so they are ready to serve with your tacos when they are done. Store in the refrigerator if needed.
  • Preheat Blackstone Griddle, flat-top griddle or 12” cast iron skillet to medium-high heat.
  • Divide the ground beef into 4 equal sections. Take one section and spread it evenly over one side of a tortilla making sure to cover the entire tortilla, it will be thin. Repeat with all tortillas and ground beef. Place on a tray until ready to cook.
  • Season each taco with beef seasoning.
  • Place about half of butter onto the cooking surface, spread around with the back of the spatula. Place tacos with meat side down onto hot cooking surface.
  • Cook 3-4 minutes, flip taco and top with a slice of cheese on each taco. Cook an additional 3 minutes or until the hamburger is cooked through to 160
    degrees Fahrenheit.
  • Once the burgers are fully cooked, remove them from the griddle and add your desired toppings.
