Whole almonds are coated in a flavorful seasoning and smoked until they’re warm and deliciously smoky! We love smoked nuts around here, and these smoked almonds are always a favorite.

They also make the perfect homemade treats to give as gifts during the holiday season to your friends and neighbors. Simply put some in a clear bag and tie it with ribbon and it’s the perfect flavor-filled treat.

Seasoning for Smoked Almonds

You can smoke plain almonds, but for added flavor I like to toss them in a simple seasoning mix first. So, for this recipe you will need:

  • Raw almonds – Be sure to buy whole almonds and not ones that are chopped or slivered.
  • Butter – Or you can use the same amount of olive oil.
  • Granulated sugar – This adds just a touch of sweetness to balance out the other spices.
  • Salt and black pepper
  • Paprika
  • Cumin

The Best Wood Pellets to for Traeger Smoked Almonds

There are a few wood pellets you can use for smoked almonds. We love apple, pecan, cherry, or hickory. You can also use a blend of wood pellets.

How to Smoke Almonds

Preheat: Heat the smoker to 250°F.

1st smoke: Spread the almonds out on a rimmed sheet pan and smoke them for one hour.

Season: Combine the melted butter with the spices and drizzle the mixture over the almonds. Stir them to coat them evenly.

2nd smoke: Leave the seasoned almonds in the smoker for 30 minutes. Stir them often until they are toasted and browned.

Serve or store: If you are serving them right away, allow them to cool off until they are warm. Or let them cool to room temperature and then store them in an airtight container.

How long do smoked almonds keep?

Keep them in an airtight container at room temperature, and they will keep for up to two weeks.

Can you smoke other kinds of nuts?

Yes, you can smoke pretty much any kind of nut that you like! Try peanuts, cashews, pecans, or macadamia nuts. You can also make a batch of mixed nuts.

How to Serve Smoked Almonds

The easiest way to serve smoked almonds is in a bowl and enjoy them by the handful! But there are other ways to use these delicious smoked nuts:

  • Toss them in some trail mix or other kind of snack mix.
  • Add them to your favorite salads for some added crunch and smoky flavor! We love them in a grilled chicken salad.
  • Chop them up and sprinkle them over grilled green beans or other veggie you like.

  • Cook them low and slow for the best result – if the smoker temperature is too high they will burn.
  • Keep an eye on them after you coat them in the seasoned butter. Once they are toasty hot take them off the smoker.
  • Don’t store them until they are completely cooled otherwise moisture will get trapped in the container and they won’t keep as long.

Ingredients

  • 32 ounces raw almonds
  • 4 Tablespoons butter or olive oil
  • 2 Tablespoons sugar
  • 1 Tablespoon salt
  • 2 teaspoons black pepper
  • 2 teaspoons paprika
  • ½ teaspoon cumin

Instructions

  • Preheat the smoker to 250° Fahrenheit according to the manufacturer's directions. We recommend using apple, pecan, cheery hickory or a signature blend of wood pellets.
  • Spread the almonds onto a rimmed baking sheet or aluminum pan and smoke for 1 hour.
  • When the hour of smoking time is almost up combine the melted butter and seasonings in a small bowl.
  • Remove almonds from the smoker and drizzle seasoned butter over the top of them. Toss almonds until coated with butter and place back on the smoker.
  • Smoke for half hour or until toasted and browned stirring several times.
  • Remove from smoker and allow to cool slightly, serve warm or can be stored in an air tight container for 2 weeks.

      It is important to note that almonds can absorb moisture and odors, so it’s best to store them in an airtight container, and check the quality before using them, if you notice any signs of spoilage such as mold, off odor or rancid smell, discard them.

    Your original recipe sounded like what I needed as a base for Parm Garlic and Ranch almonds. I used 2 T oil (avocado) and 1 1/2 T HV Ranch dressing on 16 oz of almonds and the same but with Cabela’s 1 1/2 TFrench Fry seasoning, Parmesan and Garlic. Smoked them on my Traeger at 250 for 1 1/2 hours, stirred on the dressings and smoked and stirred for another hour at 225. A-M-A-Z-I-N-G!
