There’s nothing quite as classically cozy as a gooey grilled cheese. And while it’s super easy to make some on a skillet, making a big batch of grilled cheese on the Blackstone is so fun! Whether you need a quick lunch for your kids or need an easy side to dip in your tasty tomato soup, this Blackstone grilled cheese recipe is a game changer.

The mark of a good grilled cheese is if the bread is perfectly toasted and crispy, while the cheese is ooey gooey on the inside. When my grilled cheese get too brown on the outside and the cheese is only partially melted, it just makes me sad. But cooking on a griddle is the easiest way to ensure that the heat is evenly distributed and make the BEST grilled cheese!   • It only takes 15 minutes to make grilled cheese on a griddle. It’s the perfect weeknight meal addition!

Ingredients for Blackstone Grilled Cheese

  • Texas toast – I like using Texas toast because it’s a thicker slice of bread and will hold up better on the Blackstone. Regular white bread will work too, or you could use a different hearty bread. Slices of sourdough bread would be super tasty!
  • Cheddar cheese – Everyone has their opinions on what cheese is best for a grilled cheese sandwich. We love fresh cheddar cheese, but you can use American cheese or whatever else you want.
  • Mayonnaise – This is the secret ingredient to the best grilled cheese ever. A little bit of mayo adds a delightful creaminess to each sandwich. It soaks into the bread and is just so good!

How to Make Blackstone Grilled cheese

  1. Spread some mayonnaise on 1 side of each piece of bread. Then place one half of the bread onto the Blackstone with the mayonnaise side down.
  2. Top the bread with 2 slices of cheddar cheese and then place the other piece of bread on top of cheese with mayonnaise side up.
  3. Heat the sandwich for 2-4 minutes until the bottom piece of bread is golden brown. Then flip and cook the opposite side sandwich for 2-4 minutes.
  4. Remove the sandwich to a plate. Let the sandwich rest for 2-3 minutes so that the cheese is not too hot. Cut in half and enjoy!

How to Store Leftover Grilled Cheese

Allow each sandwich to cool completely and then wrap them individually in plastic wrap or aluminum foil. You can also place them in an airtight container or plastic bag. Store in the fridge for up to 3 days. I don’t recommend freezing.

How to Reheat Grilled Cheese

For best results, you’ll want to reheat on the stovetop or on a griddle. You don’t need to fire up the entire Blackstone, unless you just want to. But a little unsalted butter in a large skillet over medium heat will help to crisp up each side of the bread again and melt the cheese.

Is mayo or butter better for grilled cheese?

This is entirely up to you! I personally love the tanginess and golden brown color that mayo adds to a grilled cheese. But if you’re not a fan of mayo, then you can use a bit of butter. You’ll want to have some whipped butter to easily spread on soft bread.

What to Serve with Blackstone Grilled Cheese

You can serve grilled cheese all on its own, but it goes great with a bunch of easy sides too. French fries or grilled sweet potatoes would be super tasty. Some BBQ little smokies are a yummy pairing too.

I love to pair it with soups like minestrone soup, mashed potato soup and hamburger soup.

And if you want to add a little something extra to your grilled cheese, bacon and caramelized onions would be delicious!

Pro Tips for the Best Blackstone Grilled Cheese

  • Spread an even layer of mayo across the fresh bread without squishing it too much.
  • Always add enough cheese to the ratio of bread you’re using. If you’re using Texas toast, you need two slices of cheese at minimum.
  • I recommend using thick slice cheese or even slicing your own cheese off of a block. This will give you the most gooey results!
