There’s just something about a tender, juicy grilled chicken breast topped with bruschetta made with garden fresh tomatoes, herbs and seasonings. Cooking this dish is really quite simple. The key is to make certain that you cook the chicken all the way through on the grill or stove top.

Ingredients for Bruschetta Chicken
- Olive oil – This adds great flavor to the dish and also helps the seasonings stick to the chicken breasts.
- Chicken breast – Use boneless and skinless chicken breast for this recipe. You can also use boneless, skinless chicken thighs.
- Italian Seasoning – Typically made from dried oregano, thyme, basil and parsley.
- Kosher salt and black pepper – Bring out the flavor of the chicken.
- Tomatoes – Fresh tomatoes are a must! Roma tomatoes are my favorite but you can also use halved cherry tomatoes.
- Red onion – Chopped finely, red onion really gives bruschetta a little bit of kick.
- Garlic – You can’t have bruschetta without freshly chopped garlic!
- Fresh basil – Fresh basil leaves really elevate fresh bruschetta.
- Grated Parmesan cheese – Salty parmesan cheese make every bite burst with flavor.
- Balsamic glaze – This classic bruschetta topper really brings it over the edge.

How to make Bruschetta Chicken
- Brush both sides of the chicken breasts with olive oil and season both sides with Italian seasoning, salt and pepper.
- Place the chicken on the grill. Cook for 5-6 minutes per side or until the thickest part of the breast reaches an internal temperature of 165 degrees Fahrenheit.
- Meanwhile, mix the bruschetta ingredients in a bowl and place in the fridge until it is time to serve.
- When chicken is fully cooked, remove from heat. Top each chicken breast with the bruschetta mixture and drizzle the balsamic glaze over top.
Pro Tips
- Make certain that you don’t overcook the chicken. Chicken is done when the juices run clear and the internal temperature is 165 degrees Fahrenheit.
- If you have tomatoes from your garden, use them! Garden fresh tomatoes are absolutely the best!
- Once you make the bruschetta, chill it in the fridge for a little bit of time beforehand. That way the flavor has time to meld together a bit more to create a truly flavorful dish.
- If you are short on time go for store bought bruschetta, it’s not as good as homemade but it’s totally a time saver!
- Cold or room temperature bruschetta is recommended.

This is 100% up to you. But a few simple dishes that you can serve with this chicken dish is a nice salad, a side of grilled cauliflower or even some delicious grilled green beans. Or try my amazing cheesy bread!

How to store leftover bruschetta chicken
If you do happen to have any leftover, store the chicken and the bruschetta in separate containers. The bruschetta will have juices from the tomato and you don’t want to take the chance of it making the chicken soggy.

Chicken
- 1 Tablespoon olive oil
- 2 large boneless skinless chicken breasts cut in half horizontally
- 2 teaspoons Italian seasoning
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Bruschetta
- 4 Roma tomatoes seeded & finely chopped
- ¼ red onion finely chopped
- 3 cloves garlic finely chopped
- 4 Tablespoons fresh basil shredded
- 2 Tablespoons olive oil
- salt to taste
- ½ cup Parmesan cheese finely shredded
- ¼ cup balsamic glaze
Instructions
- Brush olive oil over both sides of chicken breasts. Season the chicken with the Italian seasoning, salt and pepper on both sides.
- Place the chicken on gas grill heated to medium-high heat or into a grill pan or skillet. Cook for 5-6 minutes per side, or until cooked until the thickest part of the breast reaches an internal temperature of 165 degrees Fahrenheit.
- While chicken is cooking, mix together ingredients for bruschetta. To save time you can also purchase store bought bruschetta.
- Once chicken is cooked, remove from heat. Top with bruschetta and drizzle the glaze over top.
