These chicken fajita kabobs are quite possibly the perfect summer cookout recipe! Ok, maybe the same thing could be said about grilled steak kabobs too, but these chicken ones are just so incredible. So much flavor packed onto a simple skewer, and they’re really easy to make too!

We have an endless amount of tasty kabob recipes. I mean, why wouldn’t you want to squish a whole bunch of veggies and marinated meat on a skewer and cook it? So tasty! Our Greek chicken kabobs are drool-worthy, and our BBQ chicken kabobs are sticky sweet goodness. But if you’re looking for a way to spice up taco night, then you’re going to love these chicken fajita kabobs.

  • This super simple recipe only takes about a half hour to make. Whip them up on a weeknight or as a last minute meal when you’re hosting guests!
  • Grilled chicken fajita kabobs are a great lean and low carb meal. Chicken is a lean cut of meat and much of the flavor is created from seasonings and veggies.
  • Pair these yummy kebabs with any of your favorite sides. This is a versatile dish that is also great for meal prep.

Ingredients for Chicken Fajita Kabobs

  • Chicken breast – Dice up boneless skinless chicken breast into 1-inch sized chunks. Make sure the pieces of chicken are even so that they all finish cooking at the same time.
  • Garlic powder – A little garlic powder will help to elevate the flavors in this dish.
  • Wooden or metal skewers – Metal skewers are reusable, but the wooden ones will work well too. Be sure to soak wooden skewers before using so that they don’t burn on the grill.
  • Lime juice – Fresh lime juice is a great addition to the marinade for these skewers. It will add so much flavor and also help make the chicken tender.
  • Fajita seasoning – You can either make your own fajita seasoning, or use your favorite that you can find at the grocery store.
  • Olive oil – Every marinade needs an oil base, and olive oil works best in this one. You can also use vegetable oil or avocado oil.
  • Sweet onion – Sweet onion has the best flavor with this dish, but you can also use yellow onion, white onion, or even red onion if you want something with extra bold flavor.
  • Bell peppers – Slice bell peppers into chunks that are just as wide as the chicken pieces. You can use red bell peppers, yellow or green bell peppers.

How to Make Chicken Fajita Kabobs

  1. Before getting started, soak the wooden skewers in a large bowl of water if you’re not using metal skewers. Go ahead and chop up the bell peppers and onions too.
  2. Preheat your grill to medium-high heat. Then combine fajita seasoning, lime juice, olive oil and garlic powder in a large bowl until thoroughly mixed.
  3. Dice up the chicken into cubes and then place chicken cubes into the marinade to make sure each one is well coated.
  4. Take your skewers and stack peppers, onion, and seasoned chicken onto the skewers, alternating each as you go.
  5. Grill the chicken kabobs for 8-10 minutes with the lid closed, then flip and cook for another 8-10 minutes. Once the internal temperature reaches 165 degrees Fahrenheit, you’re good to go!

How To Store Leftover Chicken Fajita Kabobs

Place leftovers into an airtight container or a plastic bag, and seal bag well.

FRIDGE: Store in the refrigerator for 3-4 days.

FREEZER: Store leftovers in a freezer bag or airtight container. Freeze for up to 3 months and allow to thaw before reheating.

Uncooked chicken fajita skewers can be stored in the refrigerator for one to two days. After that, the bamboo skewers will likely begin to get too weak and could hold bacteria from the raw chicken.

We like to use chicken breasts because they’re really easy to slice up. However, chicken thighs can hold even more flavor and won’t dry out as easily either.

Ingredients

  • 1 ½ pounds chicken breast cubed
  • 1 ounce fajita seasoning (1 package)
  • ¼ cup lime juice about juice from 2 limes, plus more for after grilling
  • 3 Tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 green pepper sliced into 1 inch x 1 inch squares
  • 1 red pepper sliced into 1 inch x 1 inch squares
  • 1 yellow pepper sliced into 1 inch x 1 inch squares
  • 1 small sweet onion sliced into 1 inch x 1 inch squares
  • 8 wooden or metal skewers

Instructions

  • If you are using wooden skewers, soak the skewers in a bowl of water to prevent them from burning on the grill.
  • Preheat your grill to medium-high heat.
  • In a large bowl, combine fajita seasoning, lime juice, olive oil, and garlic powder until well mixed.
  • Add chicken cubes to the seasoning mixture making sure each one is completely coated.
  • Stack peppers, onion, and seasoned chicken cubes onto skewers alternating each for variety.
  • Grill fajita skewers with the grill lid closed for 8-10 minutes, flip the skewers over and cook for another 8-10 minutes or until internal temp of 165 degrees Fahrenheit.
  • Serve warm with limes for added flavor.
