Nachos are great for party food, midnight munchies and tailgating. They are also FANTASTIC for an easy weeknight meal! For some reason I always feel naughty when I eat them. Like I’m being a kid and getting away with something. Anyone else feel like that? I mean what’s not to love about layers of crunchy tortilla chips, tender pulled pork, barbecue sauce, cheese, red onion and pineapple? You’ll feel naughty eating them too. In a totally good way!

Especially when you have some leftover Smoked Pork Butt! I love and adore smoking a pork butt because of all of the different ways you can use this tasty pork. But you know the kids love nachos so why not for dinner? I’ve also shown you how to make Pulled Pork Taquitos, and Pulled Pork Enchiladas!

Ingredients for pulled pork nachos

  • Tortilla chips – Use your favorite brand, just make sure they are nice and sturdy.
  • Shredded pulled pork – It doesn’t matter whether you are making it fresh in the slow cooker or using leftovers.
  • Red onion – Sliced red onion gives such a good flavor but if you happen to only have a yellow or white onion, that will be fine!
  • Cheese – A mix of shredded Monterey jack and mozzarella makes these nachos perfectly cheesy and gooey. Get ready for some epic cheese pulls!
  • Bacon bits – Use store bought or cook slices of bacon and crumble yourself!
  • Pineapple tidbits – Buy a can for convenience, make sure you drain the liquid out so your nachos aren’t soggy.
  • BBQ sauce – Your favorite BBQ sauce is all you need! If you want to try making it homemade, we have got a great recipe for you to try!

More great topping options for pork nachos

  • Avocado – Slice the avocado and add before serving or even add dollops of guacamole.
  • Diced tomatoes – A nice helping of diced tomatoes is always so good on nachos.
  • Sliced jalapeños – Fresh or pickled jalapeño will add a great kick!
  • Beans – Black beans and pinto beans are our favorite! You could even serve a bean dip on the side or sprinkle it over the nachos before they cook.
  • Grilled corn – This is a great way to use leftover grilled corn. Just cut the kernels right off the cob!
  • Green garnish – Adding some diced green onions or fresh cilantro gives these sheet pan nachos a great look!
  • Dips and sauces – Sour cream, salsa, queso and pico de Gallo are always a big hit in our house! You might even be able to try something a little out there like a ranch.

When you are making pulled pork, the best cut of meat is the pork shoulder because of the high amount of fat marbled through this cut. Another good option is pork butt.

What are the BEST tortilla chips for nachos?

We all have our favorite brand of chips right? Here’s what to look for when you’re serving up great nachos:

  • Avoid flavored chips because you don’t want the flavor of the chips to overpower the ingredients.
  • Use crisp, sturdy chips that have great crunch! Flimsy chips will get soggy quickly and won’t hold up to heavy toppings (like pulled pork, pineapple and sauce).
  • Want to be different? Take a break from the everyday chips and try thinly sliced grilled potatoes or mini bell peppers for something fun and different!

How to make pulled pork nachos

  1. Place tortilla chips in cast iron skillet or on baking sheet lined with parchment paper or foil. 
  2. Sprinkle the pulled pork over the chips.
  3. Add remaining ingredients to the top of the pulled pork. 
  4. Place on grill, close lid and cook 10 minutes or until cheese is melted.
  5. Remove from grill and devour!

what is the best way to build nachos?

The best way to layer and build nachos is to first put down the chips (of course). Next, you will spread out all of your meat and veggie toppings. The cheese goes last so that the toppings are ‘glued down’ and won’t fall off. Garnish with fresh herbs or green onions when you take the pan out of the oven.

These nachos really can be a full meal on their own but if you want to offer a few more options, a nice coleslaw goes a long way. You could even top your nachos with it!

Store leftover pulled pork nachos in an airtight container in the fridge up to 3 days. The longer you leave them, the more likely they are to get pretty soggy, so I recommend eating them all when they are fresh.

To reheat leftover pulled pork nachos in the oven, heat leftovers on a pan at 350 degrees Fahrenheit for about 10 minutes or until hot. You may want to sprinkle a little more shredded cheese and garnish on top just to freshen it up a bit.

  • Grating your own block of cheese will make the best melted cheese for your nachos.
  • Make sure you drain the pineapple so the liquid from the can doesn’t make your chips soggy.

Ingredients

  • 8 ounces Tortilla Chips
  • 3 cups shredded pulled pork
  • ½ red onion thinly sliced
  • 4 ounces Monterey Jack Cheese shredded
  • 4 ounces Mozzerella Cheese shredded
  • ½ cup bacon bits
  • 8 ounces pineapple tidbits
  • ¾ cup BBQ Sauce

Instructions

  • Clean and preheat grill for direct cooking to 400 degrees Fahrenheit.
