Ingredients For Blackstone Chicken Quesadillas
- Chicken breast – Dice boneless skinless chicken breast into small chunks to make the perfect sized pieces of tasty chicken for these quesadillas.
- Shredded Mexican cheese – You can use any type of shredded cheese that you want, so swap it out with cheddar, pepper jack, monterey jack, mozzarella cheese etc. if you want to. Shredding cheese yourself will melt way better than storebought.
- Salsa – Store-bought salsa or homemade salsa will both work wonderfully in a hearty quesadilla.
- Olive oil – If you don’t have olive oil on hand, you can use any other neutral flavored oil like canola or vegetable oil. I do not recommend using butter because it is more likely to burn.
- Taco seasoning – Homemade taco seasoning will make this recipe just that much better! But you can also use store-bought seasoning.
- Flour tortillas – Grab a pack of your favorite flour tortillas to make a big cheesy quesadilla. We recommend getting extra large tortillas, burrito sized, so that it’s easy to fold them over and make a quesadilla. If for some reason you must use corn tortillas, they are a less pliable so use two tortillas to sandwich the fillings instead of folding them over.
Tasty Add-In Ideas
- Smoked bacon
- Fresh cilantro
- Diced bell peppers
- Green or red onion
- Diced tomatoes
- Mushrooms
- Olives
- Beans
- Corn
- Sour cream
How to Make a Blackstone Chicken Quesadilla
Cut chicken breasts into small cubes and place them into a medium mixing bowl.
Add taco seasoning to the chicken and mix well until the chicken is thoroughly coated in seasoning.

Spread the olive oil over the flat top griddle and then place the seasoned chicken onto the griddle in an even layer.
Sauté the chicken for 3-4 minutes on each side until browned slightly. Then top with salsa and toss thoroughly to coat well.

Cook chicken until it reaches an internal temperature of 165 degrees Fahrenheit. This will probably be another 3-4 minutes.
Push the chicken to the cooler side of the griddle and then reduce your Blackstone griddle to a medium low temperature.
Place the large burrito sized tortillas onto the griddle and then top them with shredded cheese, a layer of chicken, and more cheese.
Then carefully fold each tortilla in half to make a half moon shape.
Cook the quesadillas for about 1-2 minutes until the first side is golden brown. Then flip and allow the other side to cook until golden brown, another 1-2 minutes.

Remove completed quesadillas and place them onto a cutting board. Slice and serve immediately.
Now you have the best chicken quesadillas to enjoy!

Pro Tips
- Watch the tortillas closely after you put them on the griddle to make sure that they don’t burn or stick.
- Don’t place any fillings too close to the edge or they could spill over and make the quesadilla a bit difficult to flip.
- You can always use leftover chicken in the quesadillas for a quicker meal with one less step.

Storage And Reheating
Fridge: Place leftovers into an airtight container or zip top plastic bag and store in the fridge for 4-5 days.
Freezer: Transfer leftovers to a freezer bag or airtight container once they have completely cooled. Wrap individual pieces in plastic wrap before storing for easy access. Freeze for up to 2 months. Allow to thaw completely before reheating.
To reheat, place in the oven or on the stove top until warmed through. You can warm the quesadilla in the microwave if you prefer, but it will likely make the tortilla a bit soggy.
