Since beef tenderloin roast is a relatively expensive cut of meat, we like to make it count when cooking it. From our experience, less is better when it comes to cooking cuts of meat like a tenderloin. Just yellow mustard and some beef rub and you’ve got smoked tenderloin beef that is irresistible! So easy, so simple and oh so yummy!

Why You’ll Love this Smoked Beef Tenderloin

  • Though the total time is pretty long, you only need 10 minutes of prep time to get this beef ready to go in the smoker. Then you let it cook for an hour or so, sear it and it’s ready to serve.
  • Get 8 hearty servings from just one beef tenderloin. These servings are loaded with protein and super duper filling too.
  • Repurpose your leftovers for sandwiches, salads and so much more. The neutral seasonings go well with loads of different foods!

Ingredients for Smoked Beef Tenderloin

  • Beef tenderloin – Cook a whole beef tenderloin to perfection with just a few basic ingredients and a smoker!
  • Yellow mustard – I love to use yellow mustard as a way to help the beef rub adhere to beef tenderloin. It adds a little tang to the beef and help maintain a good flavor in every single bite!
  • Beef rub – Make your own homemade beef rub with things like garlic powder, kosher salt, ground black pepper, brown sugar and other tasty seasonings. You can also use our delicious Gimme Some Grilling Beef Rub or your favorite beef rub from the grocery store. Fresh herbs like rosemary and fresh thyme are a tasty addition too!

Helpful Tools

  • Smoker or pellet grill
  • Cutting board
  • Sharp knife
  • Meat thermometer
  • Griddle

How to Make Smoked Beef Tenderloin

Preheat the smoker to 250 degrees Fahrenheit.

Then rub the beef tenderloin with the yellow mustard and then sprinkle the beef rub evenly on all sides of the roast and rub it into the meat.

Place the seasoned beef tenderloin directly on the smoker rack away from direct heat and smoke for about 1- 1 ½ hours. Smoke until the internal temperature reaches 120 degrees Fahrenheit.

During the last 15 minutes on the smoker, preheat a grill to 500 degrees Fahrenheit or a griddle to a medium-high heat.

Transfer roast to preheated grill or griddle and sear on all sides for 2 minutes a side. If no grill is available, sear in a pan on top the stove or broil in the oven.

Check the internal temperature of meat with a thermometer to make sure the roast doesn’t go over 125-130 degrees F.

Allow the smoked beef tenderloin to rest for 15 minutes before slicing. It should have risen to an internal temperature of 130-135 degrees Fahrenheit by time of carving.

Serve with you favorite side dishes and enjoy!

How to Store Leftover Smoked Beef Tenderloin

Allow smoked beef tenderloin to cool to room temperature and then transfer to an airtight container. You can also wrap in plastic wrap or aluminum foil and then store in a plastic bag or freezer bag.

FRIDGE: Store in the fridge for 3-4 days.

FREEZER: If store properly, leftover tenderloin will freeze for up to 3 months. Allow to thaw in the fridge overnight.

Should you wrap beef tenderloin in foil when smoking?

Depending on the cooking process you use, you may need to wrap a tenderloin in foil. However, this recipe does not require you to cover or wrap the beef in foil. Just place the seasoned beef on the grill grate in the smoker and let it go to work! With the reverse sear method, you’ll get a great sear on the beef after it’s smoked.

What to Serve with Smoked Beef Tenderloin

Serve sliced easy smoked beef tenderloin with side dishes like grilled foil packet potatoes, smoked jalapeño popper mac and cheese, and grilled zucchini. I like to serve it with a creamy horseradish sauce or some homemade bbq sauce.

Easy smoked vegetables or easy grilled vegetables are a super simple side for tenderloin too. Or serve this dish with things like smoked potatoes and bacon wrapped asparagus.

Pro Tips for the Best Smoked Beef Tenderloin

  • Use an instant read meat thermometer to get an accurate reading on the internal temperature of the meat.
  • Adjust this recipe by using any of your favorite beef rubs to season the meat! You can make it saltier, spicy, sweeter — whatever you want.
  • Slice against the grain when you cut to serve. This will help ensure that you have tender slices of beef.
