How to Make Smoked Beef Tenderloin
Preheat the smoker to 250 degrees Fahrenheit.
Then rub the beef tenderloin with the yellow mustard and then sprinkle the beef rub evenly on all sides of the roast and rub it into the meat.
Place the seasoned beef tenderloin directly on the smoker rack away from direct heat and smoke for about 1- 1 ½ hours. Smoke until the internal temperature reaches 120 degrees Fahrenheit.
During the last 15 minutes on the smoker, preheat a grill to 500 degrees Fahrenheit or a griddle to a medium-high heat.
Transfer roast to preheated grill or griddle and sear on all sides for 2 minutes a side. If no grill is available, sear in a pan on top the stove or broil in the oven.
Check the internal temperature of meat with a thermometer to make sure the roast doesn’t go over 125-130 degrees F.
Allow the smoked beef tenderloin to rest for 15 minutes before slicing. It should have risen to an internal temperature of 130-135 degrees Fahrenheit by time of carving.
Serve with you favorite side dishes and enjoy!
How to Store Leftover Smoked Beef Tenderloin
Allow smoked beef tenderloin to cool to room temperature and then transfer to an airtight container. You can also wrap in plastic wrap or aluminum foil and then store in a plastic bag or freezer bag.
FRIDGE: Store in the fridge for 3-4 days.
FREEZER: If store properly, leftover tenderloin will freeze for up to 3 months. Allow to thaw in the fridge overnight.
Should you wrap beef tenderloin in foil when smoking?
Depending on the cooking process you use, you may need to wrap a tenderloin in foil. However, this recipe does not require you to cover or wrap the beef in foil. Just place the seasoned beef on the grill grate in the smoker and let it go to work! With the reverse sear method, you’ll get a great sear on the beef after it’s smoked.
What to Serve with Smoked Beef Tenderloin
Serve sliced easy smoked beef tenderloin with side dishes like grilled foil packet potatoes, smoked jalapeño popper mac and cheese, and grilled zucchini. I like to serve it with a creamy horseradish sauce or some homemade bbq sauce.
Easy smoked vegetables or easy grilled vegetables are a super simple side for tenderloin too. Or serve this dish with things like smoked potatoes and bacon wrapped asparagus.
